Betty Fucking Crocker

As you all know from my previous posts I was literally raised on Kraft macaroni and cheese. Like literally. I still love it! As a single mom knowing how to cook this staple was very handy. I expanded my cooking skills to add top ramen as well! Crazy! Luckily for my daughter and I we had spaghetti night at my dad's, family dinner nights where my sister cooked for us, a best friend that invited us over for dinner and, of course, McDonalds to round it out. Dinner at my friend's house was our most frequent dining experience and at first she found it hard to believe I didn't know how to cook. I mean, she wasn't the first person to have their mind blown by this! She embraced it though and loved feeding us! Or she made me think she did anyways! ;-) She had a house full of boys so there was always plenty of food and adding a little girl to the mix was a lot of fun! Do you think I took this opportunity to learn to cook? Heck no! I didn't even make her a drink while she was cooking! Such a spoiled brat! I've since learned better manners! And eventually I started to learn how to cook! I would tell her about dishes I was attempting and once cell phones started having cameras I would even send her pics of my creations. This is when she nicknamed me Betty Fucking Crocker! It was a joke at first because neither of us thought I could pull of some of the dishes I was attempting. And more often than not, I didn't pull them off! Lol! I could tell you the story about my first time attempting mashed potatoes but you wouldn't even believe it! Yes, I did say attempting. No mashed potatoes were eaten that night. When my sister and I lived together I went back to being a spoiled brat that had meals made for her every night unless we ate out. I would mix my sister a drink while she was cooking, though! Oh and for extra fun, my sister and I worked together and would talk about our dinner plans at work every day. Our coworkers thought we were crazy. Living together, working together and constant talk of food! At some point my sister decided it was time for me to grow up and at least cook once a week! This is when I started having a lot of fun in the kitchen along with many more failed attempts! I had the expert chef (my sister) to help guide me, my daughter started learning to cook too and the 3 of us discovered how much fun we could have together in the kitchen! At first baking became what I was best at. I was even the appointed cupcake baker for birthday parties and really came up with some amazing creations if I do say so myself! Slowly I started coming up with some great dinners and had a few recipes that only I made at home because I had conquered them so well. My signature Betty Fucking Crocker recipes! Oh yeah, the nickname stuck! My friend and I still say it all the time! We share the love of food and laughter! Now I even get the opportunity to cook for her! And all of us girls love to cook together any chance we get!
To wrap up this blog let me tell you about my latest fortune - crab season! A friend of mine takes a bunch of us out sport crab fishing a few times a week...that's a lot of crab! So I have had the opportunity to get creative with my favorite seafood! Taking Betty Fucking Crocker to a whole new level! I should probably write a cookbook! Ok, now I'm just talking crazy. I have a new partner in the kitchen and we sing and dance while cooking up all things crab! I thought I knew how to have fun in the kitchen, but this is an entirely new level! Our first dish was butter. Yep, you heard me right! While he shakes the crab I steal pieces of it to dip in lemon butter and sometimes share with him! Yum! But seriously, our first dish was out of this world! We enhanced the crab with some prawns and scallops to make an amazing seafood fettuccine. It was delectible! Next up with a lot of chopping was a crab louie salad! This is one of those salads that's probably not healthy but you feel like you're eating healthy because there are vegetables involved! And because the weather is so bad this time of year I couldn't skip making a cozy pot of crab & corn chowder! We didn't want to get sick of crab so we did take a small break with a delicious meaty spaghetti sauce for football Sunday followed by one of the best lasagnas I've ever made using that leftover sauce and lots of cheese! Back to crab, though! It's too good to waste! I dug up my sister's recipe for crab cakes and they did not disappoint! I've only ever had these made for me so it was fun to see if I could succeed at doing it myself, with a little help! This is about the time my sisters got sick of hearing about all the crab I was eating! Hehe! Sorry sisters! These crab cakes were so good we made them again a couple days later! And since those seemed so healthy I had to change it up and make a fantasticly rich crab alfredo! I could probably eat this every day! So yummy in my Betty Fucking Crocker tummy! We went crab fishing again yesterday so I had to get creative again! I mean, any of these dishes would satisfy my current crab addiction, but why not mix it up?! Crab stock from scratch to make homemade crab bisque sounded like a perfect dinner for the nasty stormy day happening here. It's definitely gray in Grayland today with some added rain and huge gusts of wind. Staying safe on land today with comfort food for the win!
